Baby Banana Muffins
Today was one of those rainy stormy days where you could just curl up on the bed and watch good movies all day long. SO naturally, I'm in the kitchen making baby food for my littlest customer, Audrey. At 10 months, Audrey is in this weird phase where she is still drinking a few bottles a day, but also eating blended cooked food as well as some finger foods.
When I first made this recipe, I was trying to get ahead of her wanting to grab everything we were eating and I just happened to have some bananas that I needed to get rid of. These have since become a staple for snack time at daycare. It's nice because I just break it into small pieces and Audrey is entertained feeding herself for a few minutes.
Typically, after these have finished cooling, I stick them into a freezer bag and just pull out one a day.
Baby Banana Muffin Recipe
Ingredients
2 eggs
2 C Flour
2 C Baby Oatmeal (or rolled oats)
1/2 tsp Cinnamon
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 C Milk
1/2 tsp Vanilla Extract
3 Mashed Bananas
12 Ounces Apple Sauce
3 Tbsp Shredded Carrots
Mix dry ingredients (flour, oatmeal, baking powder, baking soda, cinnamon) together, then mix wet ingredients together (eggs, milk, vanilla extract, bananas, apple sauce). Slowly mix the dry ingredients into the wet ingredients and add the shredded carrots.
Bake at 350 degrees for 15 minutes. Makes 48 small muffins.
